George Kovach

Our food menus were imagined by George Kovach to reflect modern, upscale light bites with Southern flare. Kovach has over 15 years of experience working in the service industry, including eight years working in Michelin-starred restaurants.
In 2017, Kovach received a Young Gun nomination from Eater, as well as the semi-finalist spot on Zagat’s first national 30 under 30 list.
 Kovach and his recipes have been featured in numerous national publications including
Food & Wine Magazine, USA Today, and Eater.


Danny Calcagni

Originally from Eastern Connecticut, Danny Calcagni grew up with Italian and Irish influence within his culture and cuisine. Influenced by his family’s from-scratch communal style of cooking, Danny found providing food for others to be a rewarding line of work. Moving to North Carolina provided Danny the opportunity to learn and practice traditional NC BBQ for 15 years. 
He then uprooted to Charleston where Danny worked in a few spots along King St. before taking a position at Big Gun Burger Shop, working under Austin Kirkland.
Following the 4 years Danny spent im Charleston, Atlanta is where Danny worked in the kitchen at Novo Cucina, moving his way up to General Manager. Back to Charleston after his journey in Atlanta, Danny continued to further his career in the restaurant business by helping build Bearcat Restaurant with a group of talented friends. 
In January of 2023 Lindsey Drummond and Jarrod Swanger of Sweetgrass Vodka Lounge brought Danny on as head chef.

We Serve Elevated Flavors

The Sweetgrass Lounge opened its doors in downtown Charleston within The Refinery as the official flagship of Sweet Grass Vodka in November 2022. An elevated, coastal-decadent tasting room, The Sweetgrass Lounge is also the home of Sweet Grass Vodka’s bottling facility. 
In addition to the tasting room, The Sweetgrass Lounge hosts cocktail classes, events and private rentals. With elements of rich wood, copper, and leather, our lounge is the perfect, picturesque space for any occasion. 
Sweet Grass Vodka was awarded three Global Masters Awards for Smoothest, Organic, and Micro-Distillery, in addition to being awarded a gold medal as the Best Domestic Vodka of 2022 by The Fifty Best.
Founded in Charleston, SC, Sweet Grass Vodka consists of three simple ingredients: potatoes, water and yeast. Each bottle of Sweet Grass Vodka contains a single strand of sweetgrass: purchased from the local Gullah Geechee artisans in the Charleston City Market in bushels, cut to size, washed and sanitized, dried and bottled by hand.
